Recipes enjoyed by the Geordie folk (North East England UK)
Cornish Pasties

Ingredients....

200g 8oz plain/self raising flour
pinch of salt
50g 2oz of lard
50g 2oz of margerine
cold water to mix about 30ml 2tbsp
mix flour in basin rub in fat
using knife to cut and stir, mix with cold water to form a stiff paste

turn dough on to a floured board or worktop and roll out

in warm weather chill pastry before use

100g 4oz of raw beef
2 medium potatoes peeled
1 small onion
1x 5ml spoon of salt
pepper

divide pastry into 4 roll out each piece about half a cm quarter of an inch thick
trim if required
chop meat finely and mix with shredded potatoe and onion season well
dovide the mixture between the rounds of pastry
damp the edges and draw up sides so that edges meet in the middle
press edges well together and flute with fingers brush with beaten egg or milk
bake in centre of hot oven 220c 425f gas 7 for 10 mins
then reduce heat to 180c 350f gas 4 and cook for further 40 mins

serve hot or cold

Optional fillings cheese and onion
or corned beef onion and mashed potatoe (pre cooked)
fresh chicken and gravy
