Recipes enjoyed by the Geordie folk (North East England UK)
3 stewing chops (mutton)
1 ounce butter
1 sheep's kidney, chopped
salt and pepper
2 small onions
1 cupful of stock or water
1 ounce butter
1 pound sliced potatoes
salt and pepper
1 cupful stock or water

Place a layer of sliced potatoes in the bottom of a buttered casserole,
add a layer of chops and kidney, then fill up with more potatoes and chopped onions. Season well and add stock or water. Cook in a moderate oven for one hour with the lid on. Remove lid and return to oven to allow top to brown for fifteen minutes approximately. Serve hot with vegetables.
