Recipes enjoyed by the Geordie folk (North East England UK)
Rich Scones
Ingredients:
200g (8oz) Self Raising Flour
1x2.5ml spoon (half tsp) salt
50g (2oz) Margarine
25g (2oz) Sugar
50g (2oz) Currants or Sultanas
Method..

1. Mix flour and rub in margarine
2. Stir in Sugar and Fruit
3. Add egg and milk reserving a little for brushing the tops
4. Knead lightly on a floured surface and roll out to just over 1cm (half inch) thicknes
5. Cut into 7cm (2 and a half inch) rounds
6. Place on greased baking tray and brush the tops with egg and milk
7. Bake in hot oven 222c 425f Gas mark 7 for about 10 mins

A scone should be soft and spongy. Handle very lightly for best results.
Tasty with butter jam & cream.


Plain Scones
Ingredients:
200g (8oz) Self Raising Flour
1x2.5ml spoon (half tsp) salt
50g (2oz) Margarine
25g (2oz) Lard
Cook same as above but brushing with Milk or Egg is optional
